Simple Blueberry Muffins



Although we've had a couple storms and the electricity was off for a whole hour, 

I did get some blueberry muffins made today! 

One of my dear sisters brought me a bag of freshly picked blueberries Sunday, and after eating half the bag this week, {ahem} I did save enough for a batch of homemade blueberry muffins.  They are simple, yet scrumptious!  So, I thought I would share the recipe.  ♥  {this recipe makes 12}

  • 1 ½ Cup Self-rising flour*
  • ½ Cup sugar
  • ¼ Cup vegetable oil
  • ½ Cup milk
  • 1 egg
  • 1 Cup fresh {or frozen} blueberries
 
 Mix ingredients in order, adding the blueberries last.  Fill paper muffin cups 2/3 full.  Sprinkle sugar on top.  Bake at 400 degrees for 20-25 minutes.  Eat fresh out of the oven!
 
*you can substitute all-purpose flour instead...just be sure to add 1/2 tsp. of salt and 
2 tsp. baking powder
